Instructions

Combine sugar and water in a saucepan over medium heat. Stir occasionally until sugar is fully dissolved. Transfer into a clean container and store in the refrigerator. 2:1 Rich Simple Syrup will last approximately 4-6 weeks in the fridge.

As with its sibling, the ratio in the name refers to the amount by weight of Sugar:Water.

2:1 Rich Simple Syrup needs to be kept in the fridge, and should last at least a month. If you notice any signs like cloudiness, an off smell or appearance, please throw it out. You can extend the shelf life of the syrup by adding half an ounce of vodka or everclear for every 6 oz of water used. Make sure to not add the alcohol if you're going to be using this for non-alcoholic drinks for people who don't consume alcohol or for children.

If you don't use hot water, it will take a long time for the sugar to dissolve. The 2:1 ratio of sugar to water is just about the limit for the solubility of sugar in water at room temperature.
